Sourced from a historic tea farm in Aichi Prefecture, established in 1820, GOKU embodies over 200 years of tea-making heritage. During the Edo period, tea from this region was supplied to Okazaki Castle and enjoyed by samurai and local communities as part of their daily lives.
Today, that legacy continues through generations of craftsmanship and traditional cultivation methods, preserving the authentic character and quality that have defined this tea-growing region for centuries.

ODAYA Matcha ZEN is a barista-grade matcha sourced from Uji, Kyoto—renowned for its premium tea heritage. It features a bold, robust flavour designed to stand out in recipes, maintaining its character even when combined with dairy and sugar. Yame Matcha – Ume is an excellent culinary-grade matcha for large-scale use in cafés, bakeries, and home kitchens. This 500g commercial pack is perfect for those who use matcha frequently—for iced lattes, smoothies, baked goods, or other blended beverages.
At ODAYA’s Specialty Cafés, this grade of matcha is also used to make some of our most popular in-house matcha desserts. Its slightly bold, bitter profile balances beautifully when combined with dairy or sweetness, making it ideal for creating crowd-pleasing treats.
Harvested later in the season from the lower parts of the tea plant and primarily machine-picked, Ume offers a deep green colour and a bold, slightly bitter taste. Its strong flavour holds up especially well when combined with milk, sugar, or other ingredients, making it a great option for matcha recipes that require intensity and body.
Ceremonial Matcha Powder: Harvested in early spring from the youngest, most tender leaves in Yame, Fukuoka Prefecture, this premium matcha is carefully stone-milled to preserve its vibrant green hue and delicate aroma. The flavour profile is smooth and mellow, with a lingering sweetness and elegant umami, making it ideal for both traditional whisked matcha and high-quality beverages or desserts.
Harvested from the top of the plant, meticulously hand-picked to ensure the youngest and most tender leaves, resulting in bright green hues and flavours ranging from smooth sweetness to delicate umami.
