    How to Choose Matcha: A Practical Guide from ODAYA

    Walk into any tea shop today and you'll likely see dozens of matcha options.

    Ceremonial. Premium. Latte. Culinary. Stone-ground. Single origin. Uji. Yame. Organic.

    The problem is that more choices don't necessarily make buying easier.

    "Which matcha should I buy?"

    The honest answer is:

    There isn't one "best" matcha. There is only the best matcha for what you're making.

    The Biggest Mistake People Make

    Many people assume that the highest grade automatically means the best purchase.

    In reality, using a ceremonial-grade matcha in a large iced latte or baking recipe is often unnecessary. Likewise, using a baking-grade matcha for traditional drinking will rarely deliver the smooth, complex flavour people expect.

    Choosing matcha is similar to choosing wine for cooking versus drinking, or selecting different coffee beans for espresso and filter brewing.

    The purpose comes first.

    1. What Actually Determines Matcha Quality?

    Many factors influence the final quality and flavour of matcha. No single characteristic tells the whole story.

    1.1 Intended Application

    This should always be your starting point.

    Ask yourself:

    • Will you drink it with water?

    • Will you make lattes?

    • Will you bake with it?

    • Will you use it in desserts or ice cream?

    Each application benefits from different characteristics.

    For example:

    One matcha rarely excels at every application. Even professional cafés often use different matcha for different products.

    1.2 Flavour Balance

    Great matcha isn't simply "sweet" or "bitter."

    Instead, it's a balance between several characteristics:

    • Umami

    • Natural sweetness

    • Bitterness

    • Astringency

    • Aroma

    These elements are influenced by cultivar, growing conditions, harvest timing and processing methods.

    Some people love rich umami.

    Others prefer a brighter, slightly more robust flavour that stands up well in milk.

    Neither preference is right or wrong.

    Choosing matcha is as much about personal taste as it is about technical quality.

    1.3 Colour

    Bright green matcha often attracts attention—and for good reason.

    Colour reflects the amount of chlorophyll retained during cultivation and processing, particularly through shade growing.

    However, colour alone should never determine quality.

    Two matcha powders may appear similarly vibrant while tasting completely different.

    Professional tea buyers always evaluate colour alongside aroma, flavour, texture and finish.

    1.4 Texture (Particle Size)

    One of the characteristics people rarely consider is particle size.

    Traditional stone-ground matcha is typically around 5–10 μm, producing an exceptionally fine powder that disperses smoothly in water and creates a silky mouthfeel.

    Larger particles may feel slightly grainier and settle more quickly after whisking.

    However, particle size alone does not determine quality. Cultivar, shading, harvest timing and processing all play equally important roles.

    1.5 Origin

    Japan produces excellent matcha across several regions, each with its own history and characteristics.

    Some of the best-known include:

    • Uji (Kyoto) – famous for refined aroma and long tradition

    • Yame (Fukuoka) – known for deep umami and sweetness

    • Nishio (Aichi) – recognised for consistent quality and vibrant colour

    • Shizuoka – diverse production with balanced flavour profiles

    • Kagoshima – modern production with bright colour and reliable supply

    Consumers often assume that one region is always superior.

    The reality is more nuanced.

    Origin certainly matters, but it is only one piece of a much larger picture that also includes cultivar, shading, harvest timing, processing and blending.

    2. Why Matcha Grades Can Be Confusing

    One of the biggest misconceptions is that matcha grades are standardised across the industry.

    They aren't.

    Unlike many agricultural products, Japan does not have a universal grading system for matcha.

    Terms such as Ceremonial, Premium and Culinary are commonly used to communicate intended applications, but different producers may classify similar products differently.

    This is why comparing matcha based on grade name alone can often be misleading.
